Description

These quinoa and oat cookies are a delightful and wholesome treat, perfect for a quick breakfast or a satisfying snack. I've been making these for my family for years, and they always disappear quickly! The combination of quinoa and oats gives them a lovely texture and a subtle nutty flavor. They're also incredibly easy to make, especially with the Thermomix®. Feel free to add some chocolate chips or dried fruit for extra sweetness. These cookies are great for kids and adults alike, and they're a fantastic way to sneak in some extra nutrients. They are also perfect for meal prepping and can be stored in an airtight container for several days.

Ingredients (11 ingredients)

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 0.25 cup white sugar
  • 1 piece egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup infant oat cereal
  • 1.5 cups quick-cooking oats
  • 1 cup cooked quinoa

Preparation (7 steps)

Preheat oven and prepare baking sheet

Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. No Thermomix settings are needed for this step.

Cream butter and sugars

Thermomix® Setting
30 sec/Speed 4

Add 1 cup softened butter, 1 cup brown sugar, and ¼ cup white sugar to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until light and fluffy.

Add egg and vanilla

Thermomix® Setting
10 sec/Speed 3

Add 1 egg and 1 teaspoon vanilla extract to the mixture. Mix for 10 Sek./Stufe 3 until well combined.

Combine dry ingredients

Thermomix® Setting
15 sec/Speed 3

Add 1 cup all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt to the Thermomix bowl. Mix for 15 Sek./Stufe 3 until just combined. Use spatula to scrape down the sides of the bowl if needed.

Fold in oats and quinoa

Thermomix® Setting
20 sec/Linkslauf Speed 2 Reverse

Add ¾ cup infant oat cereal, 1 ½ cups quick-cooking oats, and 1 cup cooked quinoa to the Thermomix bowl. Mix for 20 Sek./Linkslauf Stufe 2 until evenly distributed. Use spatula to scrape down the sides of the bowl if needed.

Shape and bake cookies

Drop dough by teaspoonfuls onto the prepared baking sheet, approximately 2 inches apart. Bake in the preheated oven until edges are golden, 10 to 15 minutes. No Thermomix settings are needed for this step.

Cool cookies

Let cool on baking sheet for 5 minutes; transfer to a wire rack to cool completely. No Thermomix settings are needed for this step.
