Description

This recipe for rabbit with mustard sauce is a hearty main course that is ideal for festive occasions. The rabbit is braised in a creamy mustard sauce and refined with bacon, onions and thyme. The preparation time is about 90 minutes and the recipe is designed for 4 servings.

Ingredients (13 ingredients)

  • 1 kg Rabbit
  • Salt
  • Pepper
  • Flour
  • 2 Scheiben Bacon
  • 1 piece Yellow onion
  • 2 piece Garlic cloves
  • 4 tbsp Margarine
  • 0.5 Teel. Thyme
  • 0.25 l White wine
  • 0.25 l Chicken broth
  • 1 cup Coffee cream
  • 1 tbsp French mustard

Preparation (9 steps)

Prepare rabbit

Divide the rabbit into portion pieces, salt and pepper and turn in flour.

Prepare bacon, onion and garlic

Cut the bacon into thin strips. Finely chop the 1 yellow onion, peel the 2 garlic cloves.

Sear rabbit

Heat 1 tablespoon margarine in a large frying pan. When it starts to brown, add the rabbit pieces and sear vigorously on all sides. Remove from the pan and keep warm.

Sauté bacon and onion

Melt 1 tablespoon of margarine in a casserole and lightly fry the 2 slices of bacon in it, but do not let it brown. Add the 1 chopped onion and sauté for 3 min./120°C/level 1.

Simmer rabbit

Place the rabbit pieces in it and turn them around. Cover and simmer over medium heat for 5 minutes.

Seasoning

Add 1/2 teaspoon thyme and the 2 whole garlic cloves.

Cook rabbit

1 Stunde/212°F/Speed 1 212°F

Pour in almost 1/4 l white wine and just as much chicken broth and slowly braise the rabbit covered until done. This takes around 1 hour/100°C/level 1, maybe a little longer.

Keep rabbit warm

Remove the rabbit pieces and keep warm.

Prepare sauce

Add 1 cup of coffee cream and 1-2 tbsp. French mustard. Bring to a boil. Knead 2 tbsp. flour with 2 tbsp. margarine and beat the fat-flour dumpling into the sauce. Season to taste, whether re-salting is necessary. Grind over with the pepper mill. Let the sauce cook through for a few minutes over moderate heat. Pour over the rabbit pieces.
