Description

This savory ground meatball stew is real soul food! With fresh carrots, potatoes and of course the delicious meatballs, it is perfect for cold days. I especially like to make it when I need something quick, because it is super easy to prepare. The rice makes it nice and filling and the parsley adds a fresh touch. An absolute favorite dish that is well received by the whole family! It can be varied with other vegetables, depending on what the refrigerator has to offer.

Ingredients (14 ingredients)

  • 1 piece Onion
  • 300 g Carrots
  • 300 g Potatoes
  • 400 g Mixed ground meat
  • 1 piece Egg
  • 2 tbsp Breadcrumbs
  • 0.5 tsp Mustard
  • 2 tbsp Butter
  • 1.2 l Vegetable broth
  • 1 piece Bay leaf
  • 100 g Long grain rice
  • 2 tbsp Chopped parsley
  • Salt
  • Pepper

Preparation (7 steps)

Chop onion

Place 1 onion in the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté vegetables

Add 2 tbsp butter and sauté for 3 min./120°C/speed 1.

Add carrots and potatoes

Add 300g carrots (in slices) and 300g potatoes (in cubes) and chop for 3 sec./speed 4. If necessary, push down with the spatula.

Add broth and bay leaf

15 min/212°F/Speed 1 100

Add 1.2l vegetable broth and 1 bay leaf and simmer for 15 min./100°C/speed 1.

Form meatballs

Meanwhile, mix 400g mixed ground meat with 1 egg, 2 tbsp breadcrumbs, 0.5 tsp mustard, salt and pepper and form small meatballs.

Add meatballs and rice

Add meatballs and 100g long grain rice (10-minute cooking time) and simmer for 10 min./100°C/reverse direction speed 1.
