Description

This chicken and bacon stew is a real winter warmer! I've been making this recipe for years, and it's always a hit with the family. The chicken thighs become incredibly tender, and the smoky bacon adds a lovely depth of flavour. The potatoes make it a complete meal in one pot. It's perfect for a chilly evening and is also great for meal prepping. You can easily adjust the amount of thyme and lemon juice to your liking. A truly comforting and satisfying dish!

Ingredients (11 ingredients)

  • 1 tbsp olive oil
  • 6 piece bone-in chicken thighs
  • 12 slice smoked streaky bacon
  • 200 g shallot
  • 350 g baby new potato
  • 1 few thyme
  • 200 ml white wine
  • 500 ml hot chicken stock
  • 280 ml buttermilk
  • 1 squeeze lemon juice
  • 2 tbsp tarragon

Preparation (6 steps)

Prepare the shallots

Peel and halve the shallots. Place them into the mixing bowl and chop for 3 Sec. / Stufe 5.

Sauté the shallots

Add olive oil to the mixing bowl and sauté for 3 Min. / 120°C / Stufe 1.

Add remaining ingredients

Add the bacon, potatoes, thyme, white wine, and chicken stock to the mixing bowl. Cook for 4 hours / 100°C / Stufe 1 / Linkslauf.

Add chicken

Thermomix® Setting
2 hours/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned chicken thighs to the mixing bowl. Cook for 2 hours / 100°C / Stufe 1 / Linkslauf.

Thicken the sauce (optional)

If you prefer a thicker sauce, strain the liquid from the mixing bowl into a saucepan and boil until thickened. This step is optional.

Finish the stew

1 min/140°F/Speed 1/Linkslauf 60 Reverse

Pour in the buttermilk (if using) and whisk until smooth. Sprinkle in the lemon juice and remaining tarragon. Season to taste. Return the chicken, bacon, and vegetables to the mixing bowl if needed. Stir gently for 1 Min. / 60°C / Stufe 1 / Linkslauf.
