Description

This beef stew with carrots is a comforting and tasty dish, perfect for autumn and winter evenings. I often prepare it for family meals, as it is always very popular. The beef, slowly simmered with carrots, smoked bacon and mushrooms, becomes incredibly tender and melting. The red wine brings a depth of flavor that goes perfectly with the veal stock. A rich and generous dish, ideal for special occasions or just to indulge. Feel free to serve with steamed potatoes or fresh pasta for a complete and satisfying meal.

Ingredients (14 ingredients)

  • 1 kg beef
  • 150 g smoked bacon
  • 300 g carrots
  • 150 g mushrooms
  • 2 piece onions (large)
  • 3 clove of garlic
  • 3 clous of clove
  • 2 c. à s. of flour
  • 75 cl of red wine
  • 2 c. à s. of veal stock
  • Olive oil
  • 1 bouquet garni
  • Salt or fine salt
  • Pepper

Preparation (8 steps)

Preparation of onions and garlic

Peel and roughly chop the onions. Put them in the Thermomix bowl and mix 3 Sek./Stufe 5. Add the peeled garlic cloves and mix 3 Sek./Stufe 7.

Sauté the onions and garlic

Add a drizzle of olive oil to the Thermomix bowl. Sauté the onions and garlic 3 Min./120°C/Stufe 1.

Adding bacon and meat

Thermomix® Setting
5 min/248°F/Speed 1 120

Add the smoked bacon to the bowl and cook 5 Min./120°C/Stufe 1. Remove the bacon and set aside. Cut the beef into medium-sized pieces. Brown the meat in a pan with olive oil until golden brown on all sides. Add the meat to the Thermomix bowl.

Adding carrots and flour

Peel and slice the carrots. Add them to the Thermomix bowl. Add the flour and mix 20 Sek./Stufe 3.

Adding red wine and veal stock

Pour the red wine and veal stock into the Thermomix bowl. Add the cloves, bouquet garni, salt and pepper. Mix 10 Sek./Stufe 2.

Cooking the stew

Cook the stew 120 Min./100°C/Stufe 1/Linkslauf.

Adding mushrooms

30 min/212°F/Speed 1 100 Reverse

Meanwhile, clean and quarter the mushrooms. After 120 minutes, add the mushrooms and reserved bacon to the Thermomix bowl. Cook for another 30 Min./100°C/Stufe 1/Linkslauf.

Remove the bouquet garni. Serve hot, ideally in a cast iron casserole dish.
