Description

This hearty Polish cabbage stew is an absolute must for cold days! With sauerkraut, white cabbage, pork goulash and Krakow sausage, it is rich and warms you from the inside out. I have been making Bigos since I was a child and I love the slightly sour taste created by the sauerkraut. Perfect as a main course with a piece of rye bread or boiled potatoes. The stew can also be prepared very well and tastes almost even better when warmed up! A hearty dish for the whole family.

Ingredients (16 ingredients)

  • 3 piece Onions
  • 1 clove Garlic
  • 800 g White cabbage
  • 100 g Smoked bacon
  • 400 g Pork goulash
  • 3 piece Tomatoes
  • 350 g Sauerkraut
  • 200 ml Vegetable broth
  • 4 piece Juniper berries
  • 6 piece Black peppercorns
  • 1 piece Bay leaf
  • 200 g Krakow sausage
  • 200 g Sour cream
  • 1 tsp Sweet paprika
  • to taste Pepper
  • to taste Salt

Chop onions and garlic

Add 3 peeled and quartered onions and 1 clove of garlic to the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Fry bacon, onions and garlic

Add 100 g of smoked bacon in cubes and sauté for 3 min./120°C/level 1.

Add 400 g of pork goulash and fry for another 5 min./120°C/level 1.

Chop and simmer white cabbage

Quarter 1 small white cabbage (approx. 800 g), cut into strips, add to the mixing bowl and chop for 5 sec./level 4. Then simmer for 10 min./100°C/level 1.

Add 3 diced tomatoes, 350 g sauerkraut (from a can), 200 ml vegetable broth, 4 juniper berries, 6 black peppercorns and 1 bay leaf.
