Description

This hearty farmer's vegetable stew is a savoury main course that is ideal for the cold season. With potatoes, carrots, peppers and red lentils, it is rich in fibre and vitamins. Preparation in the Thermomix® takes about 55 minutes and is easy, making it perfect for student cuisine.

Ingredients (16 ingredients)

  • 500 g Potatoes peeled and diced
  • 2 Stück Carrots diced
  • 2 Stück Peppers cut into strips
  • 90 g Red lentils (either already cooked or washed and soaked)
  • 1 gr Onion chopped
  • 2 Stück Garlic cloves
  • 2 EL Tomato paste
  • 1 Schuß Apple vinegar
  • 1 l Vegetable broth
  • Salt
  • Pepper
  • Paprika
  • Nutmeg
  • Bay leaves
  • 2 TL Dried herbs (marjoram, parsley)
  • Olive oil

Preparation (7 steps)

Chop onions

Put 1 large onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté vegetables

Add olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add vegetables and fry

Add 2 diced carrots, 2 peppers cut into strips and 2-3 cloves of garlic to the mixing bowl and fry for 3 min./120°C/speed 1.

Add tomato paste and fry briefly

Add 2 tbsp tomato paste and fry briefly for 1 min./120°C/speed 1.

Deglaze with apple vinegar

Add 1 splash of apple vinegar and stir briefly. 1 sec./speed 3

Add vegetable stock, potatoes and lentils

Add approx. 1 l vegetable stock, 500g potatoes peeled and diced and 90 g red lentils (either already cooked or washed and soaked) to the mixing bowl.

Let the stew simmer

Season with salt, pepper, paprika, nutmeg, bay leaves and 2 tsp dried herbs (marjoram, parsley) and simmer for 30 min./100°C/speed 1 until the potatoes are soft.
