Description

Banana curd slices are a delicious cake that is easy to prepare with the Thermomix®. The main ingredients are flour, butter, curd and of course bananas. The recipe is suitable as a sweet breakfast as well as a dessert. Preparation takes about 60 minutes, of which 30 minutes is active working time. The recipe yields 12 servings.

Ingredients (13 ingredients)

  • 250 g Flour
  • 75 g Sugar
  • 125 g Butter
  • 1 Stück Egg
  • 750 g Curd
  • 150 g Sugar
  • 1 Päckchen Vanilla sugar
  • 2 Stück Eggs
  • 1 Spritzer Lemon juice
  • 3 Stück Bananas
  • 100 g Flour
  • 50 g Sugar
  • 50 g Butter

Preparation (12 steps)

Prepare shortcrust pastry

Add flour, sugar, butter and egg to the mixing bowl.

Knead shortcrust pastry

Process all ingredients for 2 min./kneading stage to a smooth dough.

Roll out dough and form base

Roll out the dough on a floured work surface and place in a greased springform pan (26 cm diameter). Form a small rim.

Prepare curd filling

Add curd, sugar, vanilla sugar, eggs and lemon juice to the mixing bowl.

Stir curd filling

Mix all ingredients for 30 sec./speed 3.

Prepare bananas

Place WunderSlicer V2 on the mixing bowl lid. Select coarse slice. Peel the bananas and cut into slices using the WunderSlicer V2. Place the banana slices directly into the springform pan on the dough base.

Spread curd filling on bananas

Spread the curd filling evenly over the bananas in the springform pan.

Prepare Streusel

Add flour, sugar and butter to the mixing bowl.

Make Streusel

Process all ingredients for 20 sec./speed 4 to form Streusel.

Spread Streusel on cake

Spread the Streusel evenly over the curd filling.

Bake cake

Bake the cake in a preheated oven at 180°C top/bottom heat for approx. 30 minutes.

Prepare milk foam (optional)

Thermomix® Setting
2 min/158°F/Speed 3,5 158°F

Add 100 ml milk to the mixing bowl. Attach MilkiMizer. Froth for 2 min./70°C/speed 3.5.
