The combination of rhubarb and pineapple creates a unique taste that's both refreshing and comforting. It's incredibly easy to make in the Thermomix®, and the result is a vibrant relish that complements grilled meats, cheeses, or even crackers. The touch of ginger and red pepper flakes adds a subtle warmth that elevates the overall flavor profile. This relish is especially wonderful during the summer months when rhubarb and pineapple are at their peak.

Ingredients (12 ingredients)

  • 4 cups chopped rhubarb
  • 1.5 cups chopped fresh pineapple
  • 1 cup water
  • 1 cup dried cherries
  • 0.5 cup white sugar
  • 0.333 cup cider vinegar
  • 1 piece fresh ginger root, peeled and sliced (1 inch)
  • 1 clove garlic, crushed (large)
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 0.5 tsp red pepper flakes
  • 0.5 tsp fresh ground black pepper

Combine Ingredients

Add 4 cups chopped rhubarb, 1 ½ cups chopped fresh pineapple, 1 cup water, 1 cup dried cherries, ½ cup white sugar, ⅓ cup cider vinegar, 1 (1 inch) piece fresh ginger root (peeled and sliced), 1 large clove garlic (crushed), 1 teaspoon ground cinnamon, 1 teaspoon salt, ½ teaspoon red pepper flakes, and ½ teaspoon fresh ground black pepper to the Thermomix bowl.

Simmer the Chutney

Cook the mixture in the Thermomix for 15 minutes at 100°C on speed 2, ensuring the rhubarb becomes tender and starts to break down. Use the spatula to scrape down the sides of the bowl if needed.
