Hearty spelt and rye bread with a crispy crust.

Ingredients (10 ingredients)

  • 550 g Spelt flour type 630
  • 390 g Rye flour type 1150
  • 8 g Yeast
  • 12 g Salt
  • 1 tsp Sugar or Honey
  • 1 tbsp Apple vinegar or Balsamic dark
  • 200 g Natural Yogurt
  • 440 g Water
  • 2 tbsp Chia Seeds
  • 3 tbsp Sunflower seeds

Prepare yeast

Thermomix® Setting

Add 8g yeast, 1 tsp sugar or honey and 440g water to the mixing bowl and mix for 3 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 550g spelt flour type 630, 390g rye flour type 1150, 200g natural yogurt, the yeast mixture, 12g salt and 1 tbsp apple vinegar or balsamic dark to the mixing bowl and knead for 2 min./kneading stage.

Add seeds

Thermomix® Setting
30 sec/Linkslauf/Speed 2 Reverse

Add 2-3 tbsp chia seeds and 3 tbsp sunflower seeds to the mixing bowl and stir in for 30 sec./reverse/speed 2.

Let dough rise

Cover the dough and let it rise in a warm place for 2 - 2 1/2 hours.

Shape and bake bread

After the proofing time, place the dough on a lightly floured surface, divide and fold and bring to tension. Cut the bread as desired and bake in a preheated oven at 230 degrees for 60 minutes.
