Description

This baked rigatoni casserole with ground meat and mushrooms is a hearty and satisfying dish for the whole family. Preparation with the Thermomix® simplifies sauce preparation and saves time. With a working time of only 25 minutes and a total time of 85 minutes, this casserole is ideal for everyday use. The combination of ground meat, tomatoes and cheese makes it a popular dish.

  • 2 kleine Onion(s), finely diced
  • 4 Garlic clove(s), finely diced
  • 1 EL Olive oil
  • 250 g Ground beef
  • 500 g Tomatoes, pureed
  • 250 g Cream
  • 150 g Cooked ham, diced
  • 200 g Mushrooms, sliced
  • 360 g Rigatoni
  • 250 g Mozzarella, diced
  • 1.5 TL, gehäuft Italian herbs
  • 1 TL, gestr. Cayenne pepper
  • 1.5 TL, gestr. Salt
  • Pepper, freshly ground

Preparation (10 steps)

Chop onions and garlic

Place 2 small onions, finely diced, and 4 cloves of garlic, finely diced, in the mixing bowl and chop for 5 sec/speed 5. If necessary, scrape down the sides with the spatula.

Sauté onions and garlic

Add 1 tbsp olive oil and sauté for 3 min/120°C/speed 1.

Brown ground meat

Brown 250 g ground beef in a pan until crumbly and then add to the mixing bowl.

Add and sauté mushrooms

Add 200 g mushrooms, sliced, and sauté for 3 min/120°C/speed 1 with reverse blade rotation.

Add tomatoes and cream

Thermomix® Setting

Add 500 g pureed tomatoes and 250 g cream and stir for 10 sec/speed 3.

Simmer sauce

Thermomix® Setting
30 min/194°F/Speed 2 Linkslauf 90 Reverse

Add 1.5 tsp, heaped, Italian herbs, 1 tsp, level, cayenne pepper, 1.5 tsp, level, salt and pepper, freshly ground, and simmer for 30 min/90°C/speed 2 with reverse blade rotation. Use the spatula to loosen the ingredients on the bottom.

Add ham

Add 150 g diced cooked ham and heat for 5 min/90°C/speed 1 with reverse blade rotation.

Prepare rigatoni

Cook 360 g rigatoni in salted water until very al dente (approx. 5 min.) and drain. Place in a large casserole dish.

Layer casserole

Pour the sauce over the rigatoni in the casserole dish. Sprinkle 250 g diced mozzarella over the top.

Bake casserole

Bake in a preheated oven at 180 °C top/bottom heat on the middle rack for approx. 30 min. At the end, turn on the oven grill, if available, and brown the cheese until golden brown.
