Description

This hearty Beef Fillet Stroganoff is a gluten-free main course that is prepared with the Thermomix® in just 45 minutes. The main ingredients are beef fillet tips, shallots, mushrooms and pickles, refined with crème fraîche. The recipe yields 4 servings and is ideal for a hearty family meal or as a dish for guests. The working time is about 30 minutes.

  • 500 g Beef fillet tips
  • 150 g Shallots
  • 400 g Mushrooms
  • 100 g Pickles
  • 2 EL Clarified butter
  • 2 EL Flour
  • 400 ml Beef stock
  • 200 g Crème fraîche
  • 1 EL Dijon mustard
  • 2 EL Pickle juice
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL chopped Parsley

Preparation of the ingredients

Cut beef fillet tips into strips. Cut shallots into thin rings. Cut mushrooms into slices. Cut pickles into thin strips. These steps are carried out outside of the Thermomix.

Chop shallots

Add 150 g shallots to the mixing bowl and chop 3 sec./level 5.

Sauté shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp clarified butter to the chopped shallots in the mixing bowl and sauté 3 min./120°C/level 1.

Add and sauté mushrooms

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 400 g sliced mushrooms to the shallots in the mixing bowl and sauté 5 min./120°C/level 1.

Dust with flour

Thermomix® Setting
20 sec/Speed 2

Add 2 tbsp flour to the mushrooms and shallots in the mixing bowl and stir in 20 sec./level 2.

Stir in and simmer beef stock

Add 400 ml beef stock to the mixing bowl and simmer 5 min./100°C/level 1.

Refine sauce

Add 200 g crème fraîche, 1 tbsp Dijon mustard and 2 tbsp pickle juice to the mixing bowl and mix 20 sec./level 2.

Add meat and pickles

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Add the previously pan-fried 500 g beef fillet strips and 100 g pickle strips to the mixing bowl and fold in with the spatula. Heat 5 min./90°C/reverse rotation level 1.

Season with salt and pepper. Stir in 2 tbsp chopped parsley before serving.
