Description

This lemon basil sorbet is an absolute blast for hot days! The combination of the acidity of the lemon and the fresh aroma of the basil is simply unbeatable. I really like to make it when I have guests because it is so refreshing and light. The preparation is super easy and quick with the Thermomix®. The sorbet is perfect as a dessert or just in between. A little tip: If you like it a little creamier, you can add a shot of vodka. But even without it, it's a poem!

Ingredients (5 ingredients)

  • 6 piece Lemons
  • 30 g Basil (fresh)
  • 150 g Sugar
  • 1 piece Egg (Size M)
  • 50 g Powdered sugar

Preparation (5 steps)

Prepare lemon juice and chop basil

Thermomix® Setting
5 sec/Speed 8

Squeeze 6 lemons and put the juice in a measuring cup. Fill up to 500 ml with water. Put 15 g of basil in the mixing bowl and chop for 5 sec./speed 8. Transfer and set aside. Wash, pat dry and finely chop the remaining 15 g of basil.

Prepare lemon syrup

8 min/212°F/Speed 2 100

Put lemon water, 150 g sugar and the chopped basil in the mixing bowl and cook for 8 min./100°C/speed 2. Then pour through a sieve into a bowl.

Whisk egg whites

Thermomix® Setting
3 min/Speed 3.5

Separate the egg. Put egg white and 50 g powdered sugar in the mixing bowl. Insert the butterfly and whisk for 3 min./speed 3.5.

Stir in lemon syrup

Thermomix® Setting
1 min/Speed 2

Slowly add the hot lemon syrup to the egg whites with the Thermomix running at speed 2 and continue stirring for 1 min./speed 2 until the mixture is stiff.

Fold in basil and freeze

Fold the finely chopped basil leaves into the lemon-egg white mixture. Put in the ice cream maker and freeze until creamy in about 1 hour. Then put in the freezer again for 1 hour.
