Description

This cauliflower rice with chicken breast and vegetables is a delicious and healthy low-carb dish that is quick to prepare. The recipe is ideal for a high-protein diet and is perfect as lunch or dinner. Preparation in the Thermomix® saves time and ensures optimal results. The dish is designed for 2 servings.

Ingredients (10 ingredients)

  • 300 g Cauliflower
  • 1 Stück Carrot
  • 1 Stück Bell pepper
  • 0.5 Stück Zucchini
  • 2 Stück Spring onions
  • 1 EL Olive oil
  • 1 TL Curry powder
  • 2 Stück Chicken breast fillet
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (9 steps)

Chop cauliflower

Thermomix® Setting

Divide the cauliflower into florets, put 300 g of it into the mixing bowl and chop for 8 sec./speed 5. If necessary, push down with the spatula and repeat the process until the desired rice consistency is reached.

Transfer cauliflower rice

Remove the chopped cauliflower rice from the mixing bowl and set aside.

Prepare vegetables

Peel the carrot and cut into pieces. Wash, core and cut the bell pepper into pieces. Wash and cut the zucchini into pieces. Cut the spring onion into rings. Clean the celery and cut into pieces.

Chop vegetables

Put the prepared carrot, bell pepper, zucchini and celery into the mixing bowl and chop for 5 sec./speed 4.

Sauté vegetables

Add the chopped vegetables and 1 tbsp of olive oil to the mixing bowl and sauté for 5 min./120°C/speed 1.

Add cauliflower rice and spices

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 212°F Reverse

Add the chopped cauliflower rice, 1 tsp curry powder, salt and pepper to the vegetables in the mixing bowl and stir in for 3 min./100°C/reverse rotation speed 1 with the spatula.

Fry chicken breast

Fry the chicken breast in a separate pan with some olive oil until cooked through. Season with salt and pepper.

Add chicken breast and spring onions

Cut the fried chicken breast into pieces and add to the cauliflower rice in the mixing bowl together with the spring onions. Stir in for 1 min./100°C/reverse rotation speed 1.

Arrange the cauliflower rice with chicken breast on plates and serve.
