Description

This creamy rice pudding is a comforting and flavorful dessert, perfect to enjoy any time of the year, although it feels especially good in winter. The combination of condensed and evaporated milk gives it an incredibly smooth texture, while cinnamon and lemon zest (or orange, or both!) provide a delicious citrus aroma. It is a simple dish to prepare, ideal to share with family or friends. Although it is a caloric dessert, a whim from time to time does not hurt! I prepare it often and it is always a success.

Ingredients (8 ingredients)

  • 200 gramos rice
  • 250 gramos condensed milk
  • 250 mililitros evaporated milk
  • 720 mililitros water
  • 1 rama cinnamon
  • 1 trozo lemon zest
  • 1 bote cinnamon powder
  • 2 piece cloves (optional)

Preparation of the ingredients

Place the rice, condensed milk, evaporated milk, water, cinnamon stick, lemon (or orange) zest, and cloves (if using) in the Thermomix bowl.

Cooking the rice

Thermomix® Setting
35 min/208°F/Giro a la izquierda/Velocidad cuchara 98 Reverse

Program the Thermomix to cook the rice for 35 Min./98°C/Left turn/Spoon speed. It is important to use the left turn and the spoon speed to prevent the rice from breaking and sticking to the bottom of the bowl.

Rest and serve

Once the cooking is finished, remove the cinnamon stick and lemon (or orange) zest. Pour the rice pudding into individual containers or a large bowl. Let cool at room temperature and then refrigerate for at least 30 minutes before serving. Sprinkle with cinnamon powder before serving.
