Description

Chicken breasts stuffed with ricotta and wild garlic, wrapped in bacon and served with a creamy wild garlic sauce and pasta.

Ingredients (18 ingredients)

  • 4 piece Chicken breast fillets
  • 120 g Wild garlic, fresh
  • 200 g Mozzarella
  • 3 tbsp Ricotta
  • 100 g Belly bacon, sliced
  • 1 tsp Butter
  • 1 tbsp Oil
  • Salt
  • Pepper
  • 50 ml White wine
  • 2 tbsp Cream cheese
  • 20 g Wild garlic, fresh & chopped
  • 1 tsp Butter
  • Lemon juice
  • Starch if required
  • 400 g Fettuccine all'Uovo
  • 1 piece Carrot
  • 1 piece Zucchini

Preparation (12 steps)

Prepare chicken

Rinse the chicken, pat dry, salt and pepper. Cut a pocket into the side of each fillet.

Prepare wild garlic and mozzarella

Wash and shake the wild garlic dry. Cut the mozzarella into slices.

Prepare filling

Spread ricotta into the pockets and add the wild garlic and mozzarella. Fold together and press firmly.

Wrap the roulades

Wrap with the bacon slices and fix with toothpicks.

Preheat oven

Preheat the oven to 160 °C convection. Grease a baking dish with butter.

Fry roulades

Fry the roulades in a pan with some oil over medium heat until golden brown on all sides. Place in the dish and cook in the oven for approx. 20 minutes until done.

Prepare sauce

Pour white wine into the hot roasting residue in the pan. Add approx. 100 ml water, cream cheese, wild garlic and butter to the mixing bowl.

Simmer sauce

Season sauce

Season with salt, pepper and lemon juice. Thicken with starch if required.

Prepare vegetables

Peel the carrot and zucchini. Place the Wundermix WunderSlicer V2 on the mixing bowl lid and select the fine slice. Cut the carrot and zucchini into fine strips. Collect the cut material.

Cook pasta

Cook the pasta al dente. Add carrot and zucchini to the pasta during the last 3 minutes of cooking time.

Mix pasta and vegetables

Drain the pasta and vegetables and toss in the pasta pot in a little olive oil. Season and arrange as desired.
