Description

These stuffed cabbage rolls are a delicious and vegetarian alternative to traditional meat roulades. The couscous is refined with vegetables, apricots and aromatic cheese before being rolled into tender lettuce leaves. A fruity tomato sauce rounds off the dish. I like to make these cabbage rolls in the autumn when it gets colder outside. They are a great dish for a cozy lunch or dinner with friends and family. The preparation is a little more complex, but the result is worth it! You can also prepare the roulades well and store them in the fridge before baking.

Ingredients (14 ingredients)

  • 200 g couscous
  • 2.5 dl broth
  • 175 g Gruyere
  • 2 c. à soupe roughly chopped almonds
  • 2 c. à soupe oregano leaves
  • 50 g dried apricots
  • 1 poivron green pepper
  • 1 c. à soupe olive oil
  • 1 oignon onion
  • to taste Salt
  • to taste Pepper
  • 16 piece large lettuce leaves
  • 1 poivron red pepper
  • 600 g tomatoes

Preparation (7 steps)

Prepare tomato sauce

Thermomix® Setting
3 min/248°F/Speed 1 120

Cut 600 g of tomatoes into small cubes. Place 1 onion in the mixing bowl and chop for 3 sec./speed 5. Add 1 tbsp oil and sauté for 3 min./120°C/speed 1. Add the diced tomatoes and simmer for 15 min./100°C/speed 1. Season with salt and pepper.

Prepare lettuce leaves

Blanch 16 large lettuce leaves in a large amount of boiling salt water. Place on kitchen paper. Flatten the thick leaf ribs with a ladle. Place two leaves on top of each other.

Prepare couscous

Cut 1 green pepper and 50 g dried apricots into cubes. Fry in a pan with 1 tbsp oil for 2 min. Add 2.5 dl broth and bring to a boil. Add 200 g couscous, cover and leave to swell for 10 min.

Chop cheese and refine couscous

Place 175 g of cheese in pieces in the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula. Remove 100 g of the chopped cheese and set aside. Loosen the couscous with a fork and add to the cheese in the mixing bowl. Mix for 10 sec./reverse/speed 2.

Fill and roll roulades

Spread the couscous filling on the lettuce leaves. Fold the edges together and roll up the leaves.

Bake roulades

Pour the tomato sauce into a baking dish and place the roulades on top. Sprinkle with the remaining cheese and 2 tbsp roughly chopped almonds.

Gratinate

Bake in a preheated oven at 200 degrees for 15 minutes. Sprinkle with 2 tbsp oregano leaves.
