Description

These hearty seitan roulades with smoked tofu, prepared in the Thermomix®, are a vegan main course for festive occasions. The base consists of seitan, vegetable broth, soy sauce and mustard. With a preparation time of 75 minutes, it yields 4 servings. Ideal for anyone looking for a hearty, plant-based alternative.

Ingredients (15 ingredients)

  • 170 g Seitan base (gluten flour)
  • 300 ml Vegetable broth
  • 50 ml Soy sauce
  • 60 g Mustard (medium-hot)
  • Salt
  • Pepper
  • 185 g Smoked tofu
  • 2 EL Vegetable oil
  • 120 g Tomato paste
  • 2 Stück Onions
  • 3 Stück Pickles
  • 1 Zehe Garlic
  • 200 ml Red wine
  • 1 TL Thyme (dried)
  • Vegan gravy thickener

Preparation (10 steps)

Prepare seitan dough

Thermomix® Setting

Add 170 g seitan base (gluten flour), 200 ml vegetable broth, 50 ml soy sauce, 1 tsp mustard, 1 pinch of salt and 1 pinch of pepper to the mixing bowl and knead for 2 min./Knead setting to form a dough. Remove the dough from the mixing bowl and let it rest for 5-10 minutes.

Prepare smoked tofu

Cut 185 g smoked tofu into strips. Heat 1 tbsp vegetable oil in a pan and fry the tofu in it. Mix 50 g mustard with 2 tbsp tomato paste.

Prepare onions and pickles

Peel 1 onion, halve and cut into half rings. Cut 3 pickles into narrow strips.

Roll out seitan dough

Divide the dough into 4 pieces and roll out each portion as thinly as possible into a rectangle or pull it with your hands. If necessary, weigh down the edges with glasses.

Fill and roll up roulades

Spread each seitan roulade with 1 tbsp of mustard-tomato mixture and top with smoked tofu, onions and pickles. Roll up the roulades tightly from one of the short sides and close with roulade needles or kitchen twine.

Fry roulades

Heat 1 tbsp vegetable oil in a large pan. Fry the roulades in it for about 5 minutes on all sides until golden brown, then remove.

Sauté vegetables

Peel 1 onion and 1 clove of garlic and put them in the mixing bowl. Chop for 3 sec./speed 5. Scrape down with the spatula. Add 100 g tomato paste and sauté for 3 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 200 ml red wine, 100 ml vegetable broth and 1 tsp thyme (dried) to the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Simmer roulades

Return the roulades to the pan and pour the sauce from the mixing bowl over them. Simmer for about 30 minutes with the lid on and over low heat.

Thicken and season sauce

After the cooking time, remove the roulades from the pan and thicken the sauce with a little more tomato paste or vegan gravy thickener if necessary. Season with salt and pepper. Serve the roulades with the sauce.
