Description

Swedish cinnamon buns with cranberries are a festive pastry that is easy to prepare with the Thermomix®. The main ingredients are margarine, milk, flour, dry yeast and sugar. The preparation time is 70 minutes for 12 servings. Ideal as a sweet breakfast, dessert or finger food, especially in winter and at Christmas time.

Ingredients (12 ingredients)

  • 125 g Margarine
  • 300 ml Milk
  • 700 g Flour
  • 1 Päckchen Dry yeast
  • 100 g Sugar
  • 2 Stück Eggs
  • 1 Päckchen Vanilla sugar
  • 1 Stück Untreated lemon
  • 1 TL Cinnamon
  • 125 g Cranberries
  • 50 g Almonds chopped
  • 60 g Pearl sugar

Preparation (7 steps)

Melt margarine and heat milk

Thermomix® Setting

Put 125 g margarine into the mixing bowl and melt for 3 min./50°C/speed 2. Add 300 ml milk and heat for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting

Put 650 g flour, 1 packet dry yeast, 100 g sugar, 1 egg, 1 packet vanilla sugar, the margarine-milk mixture into the mixing bowl and process into a dough for 2 min./kneading stage.

Let dough rise

Remove the dough from the mixing bowl, place in a bowl, cover with a slightly damp cloth and let rise in a warm place for 30 minutes.

Preheat oven

Preheat the oven to 220 °C (fan oven: 200 °C).

Roll out and top the dough

Roll out the dough on a floured work surface into a rectangle about 1 cm thick. Spread 1 grated zest 1 untreated lemon, 1 tsp cinnamon, 125 g cranberries and 50 g chopped almonds on the dough.

Shape cinnamon buns

Roll up the dough and cut into slices about 2 cm thick. Place the slices on baking sheets lined with baking paper.

Brush and bake cinnamon buns

Whisk 1 egg. Brush the cinnamon buns with the egg and sprinkle with 60 g pearl sugar. Bake the cinnamon buns in the preheated oven for 10-15 minutes until golden brown.
