Description

Red chilaquiles with chicken are a comforting and flavorful Mexican dish, perfect for a weekend brunch or a festive meal! This recipe, adapted for the Thermomix®, makes preparing the red sauce, the heart of this dish, easy. Tomatoes and chiles combine to create a spicy and delicious sauce that bathes the crispy tortilla chips and shredded chicken. Add fresh cheese and cream for a creamy touch and you're done! If you like it spicy, feel free to add more serrano chile. A dish that is always a hit at home!

Ingredients (13 ingredients)

  • 4 piece tomatoes
  • 5 piece clean guajillo chiles
  • 1 piece serrano chile
  • 1 clove garlic
  • 1 trozo onion
  • 1 rama epazote
  • 1 tbsp oil
  • 1 cube chicken broth
  • salt
  • corn tortilla chips
  • 500 gramos shredded chicken
  • fresh cheese
  • cream

Preparation (4 steps)

Cook the tomatoes and chiles

Thermomix® Setting
15 min/212°F/Speed 1, luego 3 min/212°F/Speed 1 100

Fill the bowl with 500 ml of water. Add the 4 tomatoes and 1 serrano chile. Program 15 Min./100°C/Stufe 1. Then, add the 5 clean guajillo chiles and program 3 Min./100°C/Stufe 1.

Crush the ingredients for the sauce

Thermomix® Setting
3 min/Speed 10

Place in the bowl the 1 clove of garlic, 1 piece of onion, the tomatoes and the chiles cooked with a little of the cooking water. Crush 3 Min./Stufe 10.

Sauté the sauce

Thermomix® Setting
5 min/248°F/Speed 1, luego 5 min/212°F/Speed 1 120

Add 1 tbsp of oil to the bowl and sauté the crushed sauce for 5 Min./120°C/Stufe 1. Add 1 chicken broth cube, 1 sprig of epazote and salt to taste. Program 5 Min./100°C/Stufe 1.

Plate the chilaquiles

This step does not require the Thermomix. On a plate, place a layer of corn tortilla chips. Bathe them with the red sauce. Add a layer of 500 grams of shredded chicken. Incorporate fresh cheese to taste, cream to taste and sliced onion to taste. Garnish with a few sprigs of chopped cilantro. Serve immediately.
