Description

This festive beef roast with cranberry sauce is a hearty main course, ideal for winter and special occasions such as Christmas. The roast is first seared and then braised with vegetables and spices in the oven until tender and juicy. The cranberry sauce gives the dish a fruity note, while roasted walnuts provide a crunchy bite. Preparation takes about 10 hours, including the chilling time for the cranberries.

Ingredients (15 ingredients)

  • 0.5 kg Beef roast
  • 0.5 l Cranberry juice drink
  • 150 g Cranberries
  • 50 g Sugar
  • 100 g Celeriac
  • 3 Stk. Shallots
  • 40 ml Balsamic vinegar
  • 20 ml Gin
  • 150 ml Red wine
  • 0.5 Stk. Bay leaf
  • 5 Stk. Juniper berries
  • 40 g Walnuts
  • 1 EL Cornstarch
  • Salt
  • Vegetable oil (for searing)

Preparation (10 steps)

Prepare cranberries

Mix fresh cranberries with part of the cranberry juice drink and sugar in a bowl and let it sit in the refrigerator for about 8 hours or overnight. Preheat oven to 160°C.

Prepare vegetables

Peel celeriac and shallots.

Chop vegetables

Place celeriac and shallots with the Wundermix WunderSlicer V2 and the coarse disc on the mixing bowl lid and chop. Catch the chopped material.

Sear beef roast

Heat vegetable oil in a roasting pan, add beef roast, salt and sear on all sides for 2-3 minutes. Remove and set aside.

Sauté vegetables

Briefly sauté celeriac and shallots in the roasting pan, then deglaze with balsamic vinegar, gin and red wine.

Simmer sauce

Add bay leaf and juniper berries. Return beef roast to the roasting pan and braise in the preheated oven at 160°C for about 2-3 hours.

Simmer cranberry mixture

Remove cranberry mixture from the refrigerator, simmer in a saucepan for about 5 minutes until the berries fall apart slightly.

Roast walnuts

Place walnuts on a baking sheet and roast at 160°C for about 10 minutes.

Thicken sauce

Remove beef roast from the roasting pan, thicken the sauce with cornstarch if necessary.

Arrange

Cut the roast into slices or pieces, arrange vegetables on plates, place roast on top, pour sauce over it and serve with cranberry sauce and roasted walnuts.
