Description

This stuffed turkey roast is a hearty and colorful dish that is perfect for a festive family meal. The turkey breast is stuffed with fresh herbs and vegetables, giving the roast a juicy texture and aromatic flavor. The preparation is a bit more elaborate, but the result is well worth it. Served with potatoes and broccoli, it is a complete and balanced dish. I like to make this roast when visitors come because it can be prepared well in advance and is always well received.

Ingredients (13 ingredients)

  • 1 bunch Soup vegetables
  • 0.5 bunch Parsley
  • 0.5 bunch Dill
  • 0.5 bunch Chives
  • 600 g Turkey breast (have the butcher slice it flat)
  • Salt
  • White pepper
  • 3 tbsp Pepper paste
  • 500 g Small potatoes
  • 500 g Broccoli
  • 150 g Sour cream
  • 1 tsp Cornstarch
  • Sweet paprika

Prepare soup vegetables and herbs

Clean, wash, and cut the soup vegetables into coarse pieces. Wash and roughly chop the herbs. Put the soup vegetables and herbs into the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Prepare and stuff the turkey breast

Lay the turkey breast flat. Season with salt and pepper. Spread 2 tablespoons of pepper paste on top, sprinkle with half of the chopped herbs and soup vegetables.

Roll and secure the turkey breast

Roll up the turkey breast and tie it together with kitchen twine.

Prepare and sauté vegetables

Preheat the oven to 200°C. Place the turkey breast on the baking sheet of the oven and spread the remaining chopped vegetables in it. Roast in the preheated oven for about 1 hour, gradually deglazing with 1/2 liter of water.

Cook potatoes

Wash the potatoes and place them in the steamer basket. Add 500 ml of water to the mixing bowl, insert the steamer basket and steam for 20 min./Varoma/speed 1.

Cook broccoli

Clean, wash, and divide the broccoli into florets. During the last 10 minutes of the potatoes' cooking time, place the broccoli in the Varoma container and place it on top. Remove the steamer basket and Varoma after the time has elapsed.

Prepare sauce

Remove the roast and keep warm. Pour the roasting juices through a sieve into the mixing bowl. Add the remaining pepper paste and boil for 5 min./100°C/speed 2.

Mix sour cream and cornstarch and add to the mixing bowl. Stir in for 2 min./80°C/speed 2.

Season with salt, pepper and sweet paprika and stir for 10 sec./speed 3.

Arrange

Peel the potatoes, cut the roast and arrange on a plate with the broccoli and potatoes. Sprinkle potatoes with paprika. Serve sauce separately.
