Description

This rolling fondant with apples is a comforting and delicious dessert, perfect for autumn days or to celebrate a birthday. The creamy apple filling, slightly tart thanks to the lemon, contrasts wonderfully with the soft sponge cake. The Williams pear whipped cream adds a touch of freshness and elegance. I often make this cake for Sunday brunch, and it is always very appreciated. The preparation takes a little time, but the result is really worth it! A real delight for the taste buds.

Ingredients (15 ingredients)

  • 100 g sugar
  • 2 piece apples
  • 100 g flour
  • 1 pinch vanilla
  • 6 tbsp sugar
  • 3 piece eggs
  • 4 tbsp water
  • 2 piece eggs
  • 1 piece lemon
  • 100 g white brown sugar
  • 2 tbsp cornstarch
  • 250 g diced apples
  • 20 cl liquid cream
  • 5 tbsp icing sugar
  • 2 tbsp williams pear

Preparation of apple curd

Squeeze the lemon. Peel and dice the apples. Put the diced apples in the Thermomix bowl and mix lightly for 3 Sec./Level 4. There must be small pieces of apple remaining. Transfer the mixed apples to a saucepan. Add the eggs, 100 g of sugar and 2 tablespoons of cornstarch diluted in 4 tablespoons of water. Heat everything over low heat, stirring constantly with a wooden spoon until the mixture thickens. Let cool at room temperature.

Preparation of caramelized apples

Peel the apples and cut them into very thin slices. Arrange the apple slices on a sheet of baking paper on which you have spread the vanilla mixture and 6 tablespoons of sugar.

Cooking the caramelized apples

Preheat the oven to 180°C. Bake the apples for about 10 minutes, until they are nicely golden and caramelized, but not burnt. Remove the apples from the oven and set aside.

Preparation of the sponge cake

Put the egg yolks and 100g of white brown sugar in the Thermomix bowl. Insert the whisk. Beat the mixture for 3 Min./Level 4 until it becomes foamy and has doubled in volume. Remove the whisk. Add 100 g of flour and mix for 10 Sec./Level 3. Remove the preparation from the Thermomix and set aside. Beat the egg whites until stiff. Gently fold the beaten egg whites into the previous preparation, stirring gently so as not to break them.

Cooking the sponge cake

Spread the preparation on the caramelized apples. Bake in the preheated oven at 180°C for about 8 minutes. The sponge cake should not cook too much, otherwise it will be difficult to roll. When it comes out of the oven, spread the sponge cake on a damp but wrung out cloth and roll it up immediately. Let it cool slightly.

Filling and rolling

Gently unroll the lukewarm sponge cake. Spread the apple curd over the entire surface. Roll the cake immediately and set aside in the refrigerator.

Preparation of pear whipped cream

Thermomix® Setting
2 min/Speed 3

Put the bowl and whisks in the freezer for 15 minutes, and the liquid cream for 10 minutes. Remove everything from the freezer. Put 20 cl of liquid cream in the Thermomix bowl. Insert the whisk. Beat for 2 Min./Level 3. Add little by little 5 tablespoons of icing sugar and 2 tablespoons of Williams pear. Beat again for 30 Sec./Level 3 until you obtain a very firm whipped cream.

Decoration of the rolling cake

Put the whipped cream in a piping bag fitted with a fluted nozzle. Decorate the cake with the whipped cream. Serve chilled.
