Description

This dish is a real classic that I always enjoy preparing! The tender rump steak harmonizes perfectly with the aromatic herb butter sauce. The gnocchi are a great side dish and the bacon beans provide a hearty note. The preparation is a bit more complex, but the result is worth it. It tastes particularly good when using fresh herbs. A great dish for special occasions or just to treat yourself again!

Ingredients (19 ingredients)

  • 40 g Shallots
  • 100 g Soft butter
  • 3 tbsp Soft butter
  • 1 tsp Capers
  • 1 piece Anchovy fillet
  • 3 tsp Tomato ketchup
  • 1 tsp Mustard
  • 1 tsp Cognac
  • 0.5 tsp Marjoram
  • 1 tbsp Worcestershire sauce
  • to taste Salt
  • to taste Pepper
  • 800 g Green beans
  • 4 piece Rump steaks (approx. 250 g each)
  • 20 g Clarified butter
  • 500 g Gnocchi (refrigerated section)
  • to taste Freshly grated nutmeg
  • 8 Scheiben Breakfast bacon (bacon, approx. 96 g)
  • 50 g Whipping cream

Preparation (7 steps)

Chop shallots

Thermomix® Setting

Peel 2 shallots (approx. 40 g), quarter and put in the mixing bowl. Chop for 3 seconds/speed 5. Scrape down the sides with the spatula.

Prepare herb butter sauce

Thermomix® Setting
20 sec/Speed 6

Add 100 g soft butter, 1 tsp capers, 1 anchovy fillet, approx. 3 tsp tomato ketchup, 1 tsp mustard, 1 tsp cognac, ½ tsp marjoram, approx. 1 tbsp Worcestershire sauce, salt and pepper to the shallots in the mixing bowl. Mix for 20 seconds/speed 6. Scrape down the sides with the spatula and mix for another 10 seconds/speed 6. Transfer the butter mixture to a bowl and refrigerate for approx. 30 minutes.

Prepare beans

Wash and trim 800 g green beans. Cook in a separate pot with boiling salted water for 12–15 minutes. Then drain and let cool.

Prepare gnocchi

Fry 500 g gnocchi (refrigerated section) in a separate pan with 2 tbsp soft butter for approx. 10 minutes, turning occasionally. Season with salt and freshly grated nutmeg.

Prepare bacon bean parcels

Divide the cooled beans into 8 equal portions and wrap each with a slice of breakfast bacon (bacon, approx. 96 g). Heat 1 tbsp soft butter in a separate pan and sauté the bean bundles in it for approx. 4 minutes, turning occasionally. Season with salt and pepper.

Bring cream to a boil

Briefly bring 50 g whipping cream to a boil in a separate pot.

Finish sauce

Add the chilled butter mixture to the boiled cream in the pot, let it melt and whisk well with an immersion blender.
