Description

This hearty sausage and tomato rigatoni is a comforting and flavorful dish that's perfect for a weeknight meal. I've been making this recipe for years, and it's always a hit with my family. The chunky sausage adds a satisfying texture, while the rich tomato sauce is bursting with flavor. It's a simple recipe that comes together quickly, making it ideal for busy evenings. Feel free to add a pinch of chili flakes for a little extra heat. Serve with a sprinkle of Parmesan cheese for a truly satisfying meal.

Ingredients (8 ingredients)

  • 1 tbsp olive oil
  • 4 piece thick pork sausages
  • 2 clove garlic cloves
  • 200 ml medium white wine
  • 1 tbsp tomato purée
  • 400 g can chopped tomatoes
  • 500 g pack rigatoni
  • 1 handful basil leaves

Garlic preparation

Add 2 garlic cloves to the mixing bowl and chop for 3 sec/speed 7.

Sausage preparation

Heat 1 tbsp olive oil in a heavy-based pan (preferably not non-stick) and add 4 thick pork sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in 200ml white wine and boil until it has reduced by half.

Tomato sauce preparation

Stir in 1 tbsp tomato purée and 400g can chopped tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.

Pasta preparation

While the sauce cooks, boil 500g pack rigatoni according to pack instructions and drain. Stir in handful basil leaves if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.
