Description

This rustic cherry tomato tart is a real ray of sunshine on a plate! I love to prepare it in the summer, when the tomatoes are full of sunshine and full of flavour. The crispy shortcrust pastry, the sweetness of the mozzarella and the scent of herbs from Provence... a delight! It is a simple and convivial dish, perfect for a family lunch or a picnic with friends. And the little extra? It is super easy to make, even if you are not a cooking pro. Don't hesitate to vary the varieties of tomatoes for even more colours and flavours!

Ingredients (9 ingredients)

  • 1 packet grated Gruyère cheese
  • 2 pinch herbs from Provence
  • 1 pâte shortcrust
  • 6 piece eggs
  • to taste Salt
  • to taste Pepper
  • 1 piece small pepper
  • 0.5 piece mozzarella
  • 250 g cherry tomatoes

Preparation (8 steps)

Preparation of the dough

Preheat the oven to 180°C. Unroll the shortcrust pastry and place it in a tart dish. Prick the bottom of the dough with a fork.

Preparation of the vegetables

Wash the cherry tomatoes and cut them in half. Wash and cut the pepper into small dice.

Distribution of vegetables on the dough

Arrange the halved cherry tomatoes on the bottom of the tart. Sprinkle the diced pepper over the entire surface.

Preparation of the quiche mixture

Thermomix® Setting

In the Thermomix bowl, break the 6 eggs, add the salt and pepper. Mix 20 Sec./Stufe 4.

Addition of herbs and cheese

Thermomix® Setting
10 sec/Speed 3/Linkslauf Reverse

Add the herbs from Provence and the grated Gruyère cheese (keeping a pinch aside) in the Thermomix bowl. Mix 10 Sec./Stufe 3/Linkslauf.

Pour the mixture onto the tart

Pour the Thermomix preparation onto the tart, making sure to distribute it evenly over the entire surface.

Addition of mozzarella and the rest of the Gruyère cheese

Cut the mozzarella into dice and sprinkle them on the tart. Add the rest of the grated Gruyère cheese.

Baking the tart

Bake the tart in the oven preheated to 180°C for about 40 minutes, or until the dough is golden and the filling is set.
