Description

This beef burgundy, revisited for the Thermomix®, is a comforting and flavorful dish, perfect for autumn or winter evenings. The beef, simmered slowly in a rich red wine with bacon, mushrooms and carrots, becomes incredibly tender and fragrant. I often make this dish when I want a warm and easy to prepare meal. It is ideal for a dinner with friends or family, and goes perfectly with steamed potatoes or mashed potatoes. A true rustic delight!

Ingredients (12 ingredients)

  • 300 g beef for stewing
  • 75 g mushrooms
  • 35 g bacon
  • 1 piece medium carrot
  • 1 piece Large onion
  • 1 petit bouquet parsley
  • 1 bouquet garnish
  • 25 cl red wine
  • 1 c. à c. flour
  • 1 pinch Salt or fine salt
  • 1 pinch Pepper
  • 1 tbsp Olive oil

Preparation (6 steps)

Preparation of the meat

Cut the beef into medium-sized pieces (about 4 cm). Set aside.

Preparation of the vegetables

Wash, peel and cut the carrot into slices about 1 cm thick. Peel and cut the onion into quarters (if it is a large onion). Wash the mushrooms, cut the stems and separate the heads from the stems. Set aside the heads and stems in two different containers. Wash and tie the bunch of parsley with kitchen twine. Keep a few sprigs for decoration.

Browning the meat

In a frying pan, quickly brown the meat over high heat with a little olive oil. Brown all 4 sides if possible. Add 1 tsp of flour and mix.

Initial cooking in the Thermomix

Thermomix® Setting
60 min/212°F/Speed 1 100

Pour the carrot, onion, parsley bouquet, mushroom stems and half of the bacon into the Thermomix bowl. Add the browned meat and cover with red wine. If necessary, add a little water (about 15 cl). Close the bowl and cook 60 Min./100°C/Stufe 1.

Adding mushrooms and bacon

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the sliced mushroom heads and the rest of the bacon to the Thermomix bowl. Salt, pepper and cook again 10 Min./100°C/Stufe 1.

Plating

Arrange the beef burgundy with a few sprigs of parsley and the accompaniments of your choice.
