Description

This dish is a great combination of tender fish and a creamy pea puree. The saithe gets a nice texture and a fine nutty taste from the almond crust. I like to make it when I need something quick, but still want something special on the table. The dish is not only delicious, but also visually appealing and therefore also suitable for guests. If you like, you can serve a fresh salad with it. An absolute favorite recipe that is always well received by us!

Ingredients (14 ingredients)

  • 800 g Potatoes
  • 300 g Salt
  • 1 piece Onion
  • 1 piece Organic lemon
  • 8 Zweig(e) Chervil
  • 4 piece Saithe fillets (à approx. 150 g)
  • 3 tbsp Pepper
  • 1 Prise(n) Sugar
  • 50 g Flaked almonds
  • 4 tbsp Breadcrumbs
  • 1 piece Egg (room temperature)
  • 2 tbsp Wheat flour Type 405
  • 200 ml fresh Whole milk 3.8 %
  • 3 tbsp Butter

Preparation (8 steps)

Prepare potatoes

Thermomix® Setting
20 min/212°F/Speed 1 100

Peel, wash and halve 800 g potatoes. Place the potatoes in the simmering basket. Add 300 g salt and 1000 ml water to the mixing bowl, insert the simmering basket and cook for 20 mins/100°C/speed 1.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Peel, quarter and place 1 onion in the mixing bowl. Chop for 3 sec/speed 5.

Sauté peas

Thermomix® Setting
3 min/248°F/Speed 1 120

Leave the chopped onion in the mixing bowl. Add 1 tbsp butter and sauté for 3 mins/120°C/speed 1. Add 200 g peas (thawed) and sauté for another 2 mins/100°C/speed 1. Season with salt and 1 pinch of sugar.

Add lemon zest and chervil

10 sec/Speed 1

Grate the lemon zest from 1 organic lemon with a zester. Wash 8 sprigs of chervil, pat dry and finely chop the leaves except for 2 stalks. Add lemon zest and chopped chervil to the peas in the mixing bowl and stir in for 10 sec/speed 1.

Prepare mashed potatoes

Thermomix® Setting
3 min/194°F/Speed 4 90

After the cooking time, remove the simmering basket with the potatoes and empty the water from the mixing bowl. Add 200 ml fresh whole milk and 1 tbsp butter to the mixing bowl and heat for 3 mins/90°C/speed 1. Add the cooked potatoes and process into a puree for 20 sec/speed 4. Season with salt.

Prepare fish

Wash and pat dry 4 saithe fillets (à approx. 150 g). Season with pepper and salt. Drizzle with 1–2 tbsp lemon juice. Mix 50 g flaked almonds and 4 tbsp breadcrumbs in a deep plate. Beat 1 egg (room temperature) in a deep plate. Place 2 tbsp wheat flour Type 405 in another deep plate. Turn fish in flour, egg and almond mix one after the other.

Fry fish

Heat 2 tbsp butter in a pan. Fry fish fillets in it, turning occasionally, for approx. 3–4 minutes until golden brown and cooked through.

Arrange

Spread the mashed potatoes on plates. Add the pea mixture and arrange the fried fish fillets on top. Garnish with the remaining chervil leaves and lemon wedges.
