Description

This Bean-Pear-Salad is a light and refreshing dish that tastes especially good in summer. The combination of crunchy beans, sweet pears and a hint of maple syrup makes it a special taste experience. I like to make this salad when I need something quick and still want to put something healthy on the table. The preparation is easy and the salad can be prepared well in advance. If you like, you can crumble some goat cheese over it. An absolute must for all salad lovers!

Ingredients (9 ingredients)

  • 200 g Green beans
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Maple syrup
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Olive oil
  • 1 tbsp Sunflower seeds
  • 1 piece Pear
  • 0.5 bunch Chives

Preparation (5 steps)

Prepare and cook beans

Thermomix® Setting
10-15 min/212°F/Speed 1 100

Wash, clean and cut 200 g green beans into bite-sized pieces. Add salt water to the mixing bowl and bring to the boil for 10 min./100°C/speed 1. Add the sliced beans and cook for 10 - 15 min./100°C/speed 1, depending on size. Then drain through the simmering basket and rinse with cold water.

Prepare chives

Wash 0.5 bunch of chives, shake dry and cut into fine rings. Set aside.

Prepare dressing and marinate beans

Mix 1 tbsp maple syrup, 2 tbsp balsamic vinegar, 1 tbsp olive oil, salt and pepper in a small bowl. Mix the sauce with the cooled beans and leave to infuse for 120 min.

Roast sunflower seeds

Roast 1 tbsp sunflower seeds in a pan without fat until golden brown and let cool.

Prepare pear and finish salad

Peel, quarter and remove the core from 1 pear. Cut pear quarters into wedges and mix with the roasted sunflower seeds under the marinated salad. Sprinkle with chives, mix everything again and serve.
