Ingredients (13 ingredients)

  • 1 kg white asparagus
  • 150 g cherry tomatoes
  • 1 Bund arugula
  • 150 g goat cheese
  • 20 g hazelnuts
  • 3 EL walnut oil
  • 1 TL sugar
  • 1 Prise salt
  • 2 EL pumpkin seed oil
  • 2 EL balsamic vinegar
  • 3 EL olive oil
  • 1 EL apple cider vinegar
  • 1 Prise pepper

Preparation (6 steps)

Peel and cut the asparagus

Peel the asparagus and break off the woody ends. Cut the spears diagonally into pieces.

Prepare the tomatoes and arugula

Quarter the tomatoes. Pick over the arugula and remove any tough stems.

Prepare the cheese and hazelnuts

Cut the cheese into slices. Roughly chop the hazelnuts.

Fry the asparagus

Heat 2 tbsp of walnut oil in a separate pan. Add the asparagus, season with 1 tsp of sugar and salt. Fry for 10-12 minutes. Add 2 tbsp of pumpkin seed oil and 2 tbsp of balsamic vinegar.

Prepare the dressing

Add 1 tbsp of walnut oil, 3 tbsp of olive oil, 1 tbsp of apple cider vinegar, salt, and pepper to the mixing bowl and mix for 10 sec/speed 4.

Assemble

Arrange the tomatoes, arugula, and fried asparagus on plates. Drizzle with the dressing. Garnish with cheese slices and hazelnuts. Sprinkle with some pepper.
