Description

This Hollandaise sauce is a true classic and turns out wonderfully creamy with the Thermomix®. I particularly like to make it with asparagus, but it also tastes delicious with fish or vegetables. The preparation is really straightforward and only takes a few minutes. It is important that the sauce does not get too hot so that it does not curdle. If you like it a little lighter, you can reduce the amount of butter, but I think it is the rich butter that makes the special taste. An absolute must for festive occasions or just when you want to treat yourself!

Ingredients (6 ingredients)

  • 250 g Butter
  • 3 piece Egg yolk
  • 3 tbsp Water
  • 1 tbsp Lemon juice
  • to taste Salt
  • to taste White pepper

Preparation (4 steps)

Melt butter

Thermomix® Setting
3 min/122°F/Speed 1 50

Add 250 g butter to the mixing bowl and melt for 3 min./50°C/speed 1.

Prepare egg yolks

Add 3 egg yolks, 3 tbsp water, 1 tbsp lemon juice and a pinch of salt to the mixing bowl.

Prepare Hollandaise sauce

Thermomix® Setting
7 min/158°F/Speed 3 70

Insert the butterfly. Set 7 min./70°C/speed 3 and slowly drip the melted butter through the lid opening onto the running knife.

Season and serve

Season the Hollandaise sauce with pepper and serve immediately.
