This Salvadoran Cabbage Relish, known as Curtido, is a vibrant and flavorful addition to any meal. I've been making this recipe for years, and it's always a hit! Ingredients (8 ingredients)

  • 1 piece cabbage, finely shredded
  • 1 piece white onion, halved and sliced 1/4-inch thick
  • 1 piece large carrot, grated
  • 4 piece red bird's eye chile peppers, grated
  • 1.5 tablespoons salt, or to taste
  • 3 cups boiling water
  • 0.5 cup vinegar
  • 1 tablespoon oregano

Shred and Grate Vegetables

Add the cabbage to the mixing bowl and shred for 5 Sec. / Level 5. Transfer to a large bowl. Add the onion to the mixing bowl and slice for 3 Sec. / Level 4. Transfer to the large bowl. Add the carrot to the mixing bowl and grate for 4 Sec. / Level 5. Transfer to the large bowl. Add the chile peppers to the mixing bowl and grate for 3 Sec. / Level 6. Transfer to the large bowl.

Combine Vegetables and Salt

In the large bowl, mix the shredded cabbage, sliced onion, grated carrot, and grated chile peppers together. Sprinkle 1 ½ tablespoons of salt evenly on top.

Add Boiling Water and Cool

Cover the cabbage mixture with 3 cups of boiling water. Let it cool to room temperature, about 1 hour.

Add Vinegar and Oregano

Pour ½ cup of vinegar over the cabbage mixture. Add 1 tablespoon of oregano. Mix together carefully.

Refrigerate

Cover the bowl and refrigerate until the flavors combine, about 8 hours to overnight.
