Description

This turkey ragout is a real feel-good classic that is child's play with the Thermomix®. Tender turkey breast, crunchy carrots and sweet peas combine to create a hearty dish that everyone will love. I like to make it when I need something quick, but still want something healthy on the table. Rice or potatoes go well with it. If you like, you can add some fresh lemon juice - this gives the whole thing a nice freshness. A great dish for the whole family!

Ingredients (14 ingredients)

  • 1 piece medium sized Onion
  • 600 g Turkey breast
  • 1 tbsp Oil
  • to taste Salt
  • to taste black Pepper
  • 1 tbsp Flour
  • 200 g Evaporated milk (3 % fat)
  • 1 tbsp Vegetable broth (instant)
  • 300 g Carrots
  • 150 g deep-frozen Peas
  • 125 g Long grain rice
  • 1 bunch Parsley
  • 1 piece grated zest and juice of 1 untreated Lemon
  • Lemon slices for garnish

Preparation (11 steps)

Chop Onion

Peel and quarter the onion and place in the mixing bowl. Chop 3 sec./level 5.

Fry Turkey Meat

Wash the meat, pat dry and cut into cubes. Heat oil in a pan and fry the meat all over. Season with salt and pepper. Add the chopped onion and fry briefly.

Sauté Meat and Onions

Put the fried meat and onions in the mixing bowl. Sauté 3 min./120°C/level 1.

Sweat Flour

Thermomix® Setting
1 min/248°F/Speed 1 120

Sprinkle the flour over it and briefly sauté 1 min./120°C/level 1 while turning.

Deglaze and Braise

Thermomix® Setting
30 min/212°F/Speed 1 100 Reverse

Add 500 ml of water and the evaporated milk to the mixing bowl. Cook 30 min./100°C/level 1 reverse rotation. Occasionally scrape from the edge with the spatula.

Prepare Carrots

Peel, wash and cut the carrots into sticks.

Add Carrots and Braise

Add the carrots and the vegetable broth to the mixing bowl and simmer for another 30 min./100°C/level 1 reverse rotation. Occasionally scrape from the edge with the spatula.

Add the frozen peas to the mixing bowl and cook for 5 min./100°C/level 1 reverse rotation.

Prepare Parsley

Wash the parsley, pat it dry and set some aside for garnish. Cut the rest into fine strips.

Season and Refine

1 min/194°F/Speed 1 90 Reverse

Add the chopped parsley, grated lemon zest and lemon juice to the mixing bowl. Season the goulash with salt and pepper and stir in 1 min./90°C/level 1 reverse rotation.

Serve

Prepare the rice according to the package instructions. Serve the goulash with the rice and garnish with the reserved parsley and lemon slices.
