Description

This shrimp and rice stir-fry is a quick and easy meal that's perfect for a weeknight dinner. I've been making this recipe for years, and it's always a hit with my family. The combination of savory shrimp, fluffy rice, and crisp bean sprouts is simply delicious. It's also a great way to use up leftover cooked rice. Feel free to add other vegetables like carrots or peas to customize it to your liking. This dish is best served warm and is a great option for a light yet satisfying meal. It’s ready in under an hour!

Ingredients (12 ingredients)

  • 3 cups water
  • 1.5 cups uncooked white rice
  • 4 tablespoons vegetable oil
  • 1 cup fresh bean sprouts
  • 0.5 cup chopped onion
  • 1.5 cups cooked medium shrimp, peeled and deveined without tail
  • 2 piece large eggs, beaten
  • 0.25 cup chopped green onion
  • 4 tablespoons soy sauce
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon sesame oil

Preparation (5 steps)

Cook the Rice

Thermomix® Setting
20 min/212°F/Speed 4 100

Add 3 cups of water and 1 ½ cups of uncooked white rice to the Thermomix mixing bowl. Place the simmering basket inside the mixing bowl. Cook for 20 Min./100°C/Stufe 4. Once cooked, remove the simmering basket with the rice and set aside to cool completely.

Prepare the Vegetables

Add ½ cup of chopped onion to the Thermomix mixing bowl and chop for 3 Sec./Stufe 5. Scrape down the sides of the mixing bowl with a spatula.

Sauté Vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 4 tablespoons of vegetable oil and 1 cup of fresh bean sprouts to the Thermomix mixing bowl with the chopped onion. Sauté for 3 Min./120°C/Stufe 1.

Combine Rice and Shrimp

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add 1 ½ cups of cooked medium shrimp (peeled and deveined without tail) and the cooled rice to the Thermomix mixing bowl. Cook for 3 Min./100°C/Linkslauf Stufe 1, stirring with the spatula to ensure even mixing.

Add Seasonings and Eggs

4 min/212°F/Linkslauf Speed 1 100 Reverse

Add 2 large beaten eggs, ¼ cup of chopped green onion, 4 tablespoons of soy sauce, 1 teaspoon of salt, ¼ teaspoon of ground black pepper, and ¼ teaspoon of sesame oil to the Thermomix mixing bowl. Cook for 4 Min./100°C/Linkslauf Stufe 1, stirring with the spatula until the eggs are cooked and everything is blended evenly.
