Description

This savory cheese pastry from the Thermomix® is a delicious snack or finger food, ideal for parties and buffets. The main ingredients are flour, cheese, crème fraîche and margarine, refined with paprika powder. Preparation with the Thermomix® takes about 100 minutes and yields 10 servings. The recipe is vegetarian and is well suited as a hearty side dish or appetizer, especially in winter.

  • 200 g Flour
  • 1 Msp. Baking powder
  • 1 tsp Paprika powder
  • 1 pinch Iodised salt
  • 150 g Margarine
  • 2 tbsp Crème fraîche
  • 1 tbsp Crème fraîche
  • 100 g Cheese (grated, e.g. Gouda, Emmental or mountain cheese)
  • 25 g Cheese (grated, e.g. Gouda, Emmental or mountain cheese)
  • 1 Egg yolk
  • 3 tbsp Poppy seeds, sesame seeds, caraway seeds or nuts for sprinkling
  • Baking paper

Mix dry ingredients

Put 200 g flour, 1 tsp. baking powder, 1 tsp. paprika powder and 1 pinch of iodised salt into the mixing bowl and mix for 10 sec/speed 4.

Prepare dough

Add 150 g margarine, 2 tbsp crème fraîche and 100 g grated cheese and process into a smooth dough for 2 min/kneading stage.

Cool dough

Remove the dough from the mixing bowl, wrap in cling film and refrigerate, covered, for about 1 hour.

Preheat oven

Preheat oven to 200 °C (convection: 180 °C). Line baking sheets with baking paper.

Roll out and cut out dough

Roll out the dough thinly on a lightly floured work surface. Cut out figures and shapes and place on the prepared baking sheets.

Prepare egg yolk

Separate the egg, the egg white is not needed. Whisk the egg yolk with 1 tbsp crème fraîche and 1 tbsp water in a small bowl until smooth.

Brush and sprinkle cookies

Brush the savory cookies with the egg yolk mixture and sprinkle with the remaining 25 g cheese and, for example, poppy seeds, caraway seeds, kernels or nuts.

Bake cheese pastry

Bake the cheese pastry in the preheated oven for about 10 minutes until golden yellow.

About this recipe

This recipe for savory cheese pastry is a tribute to my grandmother, who always served something hearty with her coffee. Her version was without Thermomix®, but I took the idea of baking a salty, crispy snack from her. I have modernized her recipe and adapted it to the Thermomix® to simplify and speed up the preparation. The ingredients play a crucial role in the taste and texture. The flour forms the basis, while the baking powder ensures a light and airy consistency. The paprika powder gives the pastry a pleasant spice and a light color. The margarine provides the necessary binding and makes the dough smooth. The crème fraîche contributes to the juiciness and gives the pastry a slightly sour note that harmonizes perfectly with the cheese. The cheese, ideally a mixture of Gouda, Emmental and mountain cheese, is of course the star of the recipe. It provides the savory taste and the golden brown crust. When preparing in the Thermomix®, it is important to add the ingredients in the correct order. First mix the dry ingredients so that the baking powder is evenly distributed. Then add the cold margarine in pieces so that the dough becomes nice and crumbly. The crème fraîche and cheese provide the binding. The dough should not be kneaded for too long, otherwise it will become tough. After kneading, it is important to let the dough rest in the refrigerator for at least one hour. This makes it easier to roll out and retains its shape during baking. For a vegetarian version, you can simply make sure that the cheese used is made without animal rennet. If you like it vegan, you can replace margarine and crème fraîche with vegetable alternatives and use a vegan cheese. There are no limits to the imagination when it comes to spices. In addition to paprika powder, garlic powder, onion powder, herbs of Provence or chili also go well with the cheese pastry. The cheese pastry tastes warm or cold and is an ideal snack for in between meals or as a side dish to soups and salads. It also goes well with a glass of wine or beer. If you like, you can serve it with a dip such as herb quark or sour cream. The finished cheese pastry can be stored in an airtight container for several days. The dough can also be prepared well in advance and stored in the refrigerator. So you always have a delicious snack ready. You can also freeze the dough in portions and thaw it as needed.
