Description

This savory potato and spinach gratin with feta, prepared in the Thermomix®, is a hearty main course with potatoes, spinach, and feta. The total preparation time is 105 minutes, with an active working time of about 30 minutes. The recipe is vegetarian and yields 6 servings.   • 450 g Firm cooking potatoes
  • 2 EL Butter
  • 2 EL Flour
  • 250 ml Vegetable broth
  • 250 ml Milk
  • Pepper
  • Salt
  • Nutmeg
  • 200 g Feta
  • 2 Onions
  • 2 Zehe(n) Garlic
  • 1 EL Oil
  • Butter for the dish

Prepare the spinach

Thaw the frozen spinach and then squeeze it well to remove excess water. This is important so that the casserole does not become too watery.

Prepare the potatoes

Peel, wash, and slice the firm cooking potatoes into thin slices. The best way to do this is with a vegetable slicer or a mandoline to get even slices.

Chop the onions and garlic

Peel the onions, halve them, and put them in the mixing bowl together with the garlic cloves. Chop for 3 sec/speed 5. Use the spatula to scrape everything down from the sides.

Sauté the onions and garlic

Add the oil to the onions and garlic in the mixing bowl and sauté for 3 min/120°C/speed 1.

Add and season the spinach

Add the squeezed spinach to the onions and garlic in the mixing bowl. Season with pepper, salt and nutmeg and sauté for 3 min/100°C/Reverse speed/speed 1. Use the spatula to scrape everything down from the sides.

Prepare the béchamel sauce

Put the butter in the mixing bowl and melt for 2 min/100°C/speed 1.

Make a roux

Add the flour (or buckwheat flour) to the melted butter in the mixing bowl and sauté for 2 min/100°C/speed 2.

Finish the béchamel sauce

Add the vegetable broth and milk to the mixing bowl and bring to a boil, stirring for 10 min/90°C/speed 3. Use the spatula to scrape everything down from the sides.

Season the béchamel sauce and refine with feta

Season the béchamel sauce with pepper, salt and nutmeg. Add 100 g of feta in small pieces and stir in for 1 min/60°C/Reverse speed/speed 2 until the feta has melted.

Layer the casserole

Preheat the oven to 180°C convection. Grease a casserole dish (approx. 25 x 20 x 5 cm) with butter. Layer the potato slices in the dish, overlapping like roof tiles. Distribute the spinach in between.

Finish and bake the casserole

Pour the béchamel sauce evenly over the casserole. Crumble the remaining feta (100 g) over it. Bake the casserole in the preheated oven for approx. 50-60 minutes until golden brown.
