Description

This pork dish disco style with beer is a traditional recipe that I have adapted for the Thermomix®. The pork shoulder, slowly cooked in beer, becomes incredibly tender and juicy. The red onion and spring onion give it a fresh and aromatic touch. It is perfect for a family meal or a celebration with friends. The beer reduction creates a delicious sauce that enhances the flavor of the meat. Go ahead and try this recipe and surprise everyone with a dish full of flavor and tradition! It can be accompanied with mashed potatoes or white rice.

Ingredients (5 ingredients)

  • 1 kilogramo pork shoulder
  • 1 piece red onion
  • 2 ramas spring onion
  • 1 libra beer
  • 20 ml oil

Preparation (6 steps)

Chop the red onion and spring onion

Thermomix® Setting
3 sec/Speed 5

Peel the red onion and cut it into quarters. Put it in the Thermomix bowl and chop for 3 seconds at speed 5. Remove and reserve. Wash the spring onion, separate the white part from the green. Finely chop the white part and reserve the green part to decorate at the end.

Sear the pork shoulder

Remove some of the visible fat from the pork shoulder and cut it into steaks about 2 fingers wide. Heat a tablespoon of oil in a frying pan over maximum heat. Sear the pork shoulder steaks on both sides until golden brown. Remove the meat from the pan and reserve.

Sauté the onion

Thermomix® Setting
5 min/248°F/Speed 1 120

In the Thermomix bowl, add the chopped red onion and 20 ml of oil. Sauté for 5 minutes at 120°C at speed 1.

Cook the pork shoulder in beer

Thermomix® Setting
45 min/212°F/Linkslauf Speed Schaufel 100 Reverse

Add the seared pork shoulder and the chopped white part of the spring onion to the Thermomix bowl. Pour the beer to cover the base of the pork shoulder. Program 45 minutes at 100°C at spoon speed with reverse rotation.

Reduce the sauce

Thermomix® Setting
15 min/Varoma/Speed 2 Varoma

Remove the pork shoulder from the bowl and reserve. Program 15 minutes at Varoma temperature at speed 2, without the measuring cup, to reduce the beer sauce.

Serve

Serve the pork shoulder with the beer reduction sauce and decorate with the chopped green part of the spring onion.
