Description

This chocolate almond Bundt cake from the Thermomix® is a vegan cake classic with ground almonds and cocoa. Preparation with margarine, flour and sugar takes about 40 minutes and yields 6 servings. Ideal as a dessert, for breakfast or for the winter coffee table. Especially suitable for lovers of chocolate cake and almond pastries.

Ingredients (12 ingredients)

  • 50 g Margarine
  • 100 g Flour
  • 50 g Almonds ground
  • 70 g Sugar
  • 1 Packung Vanilla sugar
  • 25 g Cocoa powder for baking
  • 30 g Chopped hazelnuts
  • 2 TL Baking powder
  • 1 TL Cinnamon
  • 1 Prise Salt
  • 100 ml Soy milk
  • 70 g Applesauce

Preparation (7 steps)

Preheat oven and prepare molds

Preheat the oven to 170 °C fan oven (190 °C top/bottom heat). Grease a mini Bundt cake pan with 6 wells (or silicone molds) with some margarine and set aside.

Melt margarine

Put 50 g margarine in the mixing bowl and melt for 3 Min./50°C/speed 1.

Mix dry ingredients

Put 100 g flour, 50 g ground almonds, 70 g sugar, 1 pack vanilla sugar, 25 g cocoa powder, 30 g chopped hazelnuts, 2 tsp baking powder, 1 tsp cinnamon and 1 pinch of salt into the mixing bowl and mix for 10 sec./speed 4. Scrape down from the edge with the spatula.

Add and mix liquid ingredients

20 sec/Speed 3

Add the melted margarine, 100 ml soy milk and 70 g applesauce to the dry ingredients in the mixing bowl and stir for 20 sec./speed 3. Scrape down from the edge with the spatula.

Fill molds with batter

Pour the batter evenly into the prepared silicone molds.

Bake

Bake the filled molds in the preheated oven for about 20 minutes. Smaller mini Bundt cakes require a shorter baking time. It is best to do the first toothpick test after 10 minutes.

Cool and Serve

Let the mini Bundt cakes cool in the mold. Carefully remove from the mold and decorate as desired or serve sprinkled with powdered sugar.
