Description

This chocolate almond mini Bundt cake is a vegan dessert that is easy to prepare with the Thermomix®. The main ingredients are margarine, almonds, flour, sugar and cocoa. In 40 minutes, 6 servings of the small cakes are created. Ideal as finger food for the Christmas season or as a sweet treat for in between.

Ingredients (12 ingredients)

  • 50 g Margarine
  • 100 g Flour
  • 50 g Ground almonds
  • 70 g Sugar
  • 1 Pck. Vanilla sugar
  • 25 g Cocoa powder for baking
  • 30 g Chopped hazelnuts
  • 2 TL Baking powder
  • 1 TL Cinnamon
  • 1 Prise Salt
  • 100 ml Soy milk
  • 70 g Apple sauce

Preparation (7 steps)

Preheat oven and prepare molds

Preheat the oven to 170 °C circulating air (190 °C top/bottom heat). Grease silicone molds with some margarine and set aside.

Melt margarine

3 min/122°F/Speed 1 50

Put 50 g of margarine in the mixing bowl and melt for 3 min./50°C/speed 1.

Mix dry ingredients

10 sec/Speed 4

Add 100 g flour, 50 g ground almonds, 70 g sugar, 1 packet vanilla sugar, 25 g cocoa powder, 30 g chopped hazelnuts, 2 tsp baking powder, 1 tsp cinnamon and 1 pinch of salt to the mixing bowl and mix for 10 sec./speed 4.

Add and stir in liquid ingredients

Add the melted margarine, 100 ml soy milk and 70 g applesauce to the dry ingredients in the mixing bowl and stir for 20 sec./speed 3. If necessary, use the spatula to scrape down from the edge and stir again for 10 sec./speed 3.

Fill batter into molds

Pour the batter evenly into the prepared silicone molds.

Bake mini Bundt cake

Place the filled molds in the preheated oven and bake for about 20 minutes. Do a stick test.

Cool and serve

Let the mini Bundt cakes cool in the mold, carefully remove from the mold and garnish as desired or serve sprinkled with powdered sugar.
