Description

This recipe for pork tenderloin medallions in creamy gorgonzola sauce is a real treat! The combination of tender pork tenderloin, spicy gorgonzola and roasted pine nuts is simply irresistible. I like to make this dish when I want to cook something special without spending hours in the kitchen. The preparation is straightforward and the result is convincing every time. Ingredients (8 ingredients)

  • 700 g Pork tenderloin
  • to taste Salt
  • to taste Pepper
  • 2 container Crème fraîche
  • 150 g Gorgonzola
  • 100 g Bacon - smoked, in strips
  • to taste Rosemary
  • 6 tbsp Pine nuts

Preparation (6 steps)

Prepare gorgonzola sauce

Add 2 cups of crème fraîche and 150g of gorgonzola to the mixing bowl and stir for 3 min./60°C/speed 2.

Add pine nuts and season

Thermomix® Setting
10 sec/Linkslauf Speed 1 Reverse

Add 6 tbsp of pine nuts, salt and pepper to the mixing bowl and stir in for 10 sec./reverse rotation speed 1.

Preheat oven and prepare meat

Preheat the oven to 200°C. Cut 700g of pork tenderloin into pieces about 5 cm thick and season with salt, pepper and rosemary on both sides.

Fry the meat

Fry the seasoned meat in a pan for about 2 minutes on each side. Remove and place in a baking dish.

Spread bacon and add sauce

Spread 100g of smoked bacon in strips on the medallions. Pour the gorgonzola sauce from the mixing bowl over the medallions.

Bake casserole

Bake the casserole in a preheated oven at 200°C for 20 minutes.
