Description

This pumpkin flan is a comforting and flavorful dish, perfect for autumn evenings. The sweetness of the pumpkin blends perfectly with the savory bacon and the creaminess of the scamorza. I often prepare it when I have dinner guests, because it is easy to prepare in advance and always makes a great impression. Preparation with the Thermomix® makes everything even easier and faster. A delicious idea for an appetizer or a vegetarian main course, if you omit the bacon. Try it, it will win you over!

Ingredients (9 ingredients)

  • 1.4 kg cleaned pumpkin
  • 1 piece eggs
  • 80 g breadcrumbs
  • 80 g grated cheese
  • 200 g scamorza
  • 200 g sweet bacon
  • fine salt
  • 20 ml extra virgin olive oil
  • 1 rametto rosemary

Preparation (7 steps)

Pumpkin into pieces

5 sec/Speed 5

Insert the cleaned pumpkin into pieces in the bowl and chop for 5 Sec./Stufe 5.

Pumpkin cooking

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 20 ml of extra virgin olive oil, fine salt to taste and a sprig of rosemary in the bowl. Cook for 20 Min./100°C/Stufe 1.

Blend the pumpkin

Thermomix® Setting
20 sec/Speed 7

Remove the rosemary and blend the pumpkin for 20 Sec./Stufe 7.

Add the ingredients

20 sec/Speed 4

Add 1 egg, 80 g of breadcrumbs and 80 g of grated cheese to the bowl. Mix for 20 Sec./Stufe 4.

Prepare the ingredients for the flan

Cut 200 g of scamorza and 200 g of sweet bacon into cubes.

Assemble the flan

In a baking dish, alternate layers of pumpkin, scamorza and bacon. Finish with a layer of pumpkin.

Baking in the oven

Bake in a preheated oven at 180°C for about 40 minutes, or until golden brown.
