Description

This juicy sheet cake with egg liqueur and cherries is a real classic that should not be missing from any coffee table. I especially like to bake it in spring when the first cherries are ripe. The egg liqueur provides a wonderfully creamy consistency and a fine aroma. The grated coconut and brown sugar give the cake a slightly caramel flavor. An absolute must for all cake lovers! It can be prepared very well and tastes delicious even the next day. Perfect for birthdays, Easter or just to enjoy.

Ingredients (11 ingredients)

  • 7 piece Eggs (size M)
  • 350 g Powdered sugar
  • 2 Pck. Vanilla sugar
  • 350 ml Oil
  • 350 ml Egg liqueur
  • 175 g Flour
  • 175 g Cornstarch
  • 1.5 Pck. Baking powder
  • 720 ml Cherries (jar)
  • 75 g Grated coconut
  • 30 g brown sugar

Preparation (6 steps)

Mix eggs, sugar and vanilla sugar

Add 7 eggs, 350 g powdered sugar and 2 packets of vanilla sugar to the mixing bowl and beat with the butterfly for 4 minutes/speed 4 until thick and creamy.

Stir in oil and egg liqueur

Slowly stir in 350 ml oil and 350 ml egg liqueur at running knife for 1 min/speed 3.

Fold in flour mixture

Mix 175 g flour, 175 g cornstarch and 1 ½ packets of baking powder. Sift the flour mixture into the mixing bowl and fold in for 30 seconds/speed 2. Use the spatula to loosen everything from the edge.

Put dough on sheet and distribute cherries

Place the dough on a greased and floured baking sheet of the oven (32 x 39 cm) and smooth it out. Drain 1 jar (720 ml) of cherries, let them drain well and spread evenly on the cake after 20 minutes of baking time.

Bake cake

Bake the cake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 60 minutes.

Let the cake cool and sprinkle

Remove the cake from the oven, place on a wire rack and let cool for about 2 hours. Before serving, sprinkle with 75 g grated coconut and 30 g brown sugar.
