Description

This banana cake is a comforting delight, perfect for a delicious snack or a Sunday brunch. I love its soft texture and its captivating scent of ripe banana. The brown sugar adds a small irresistible caramelized touch. It's a simple cake to make, even for beginners in pastry making. You can easily customize it by adding crushed nuts, chocolate chips or spices like cinnamon. A true pleasure to share with family or friends! It keeps well for several days, if there is any left...

Ingredients (8 ingredients)

  • 4 piece very ripe bananas
  • 250 g flour
  • 4 piece eggs
  • 200 g brown cane sugar or brown sugar
  • 160 g butter
  • 1 c. à s. dark rum
  • 1 packet yeast
  • 1 packet vanilla sugar

Preparation of the bananas

Thermomix® Setting
10 sec/Speed 5

Put the 4 very ripe bananas in the Thermomix bowl and mix for 10 Sec./Stufe 5 to obtain a smooth puree.

Mixing the ingredients

30 sec/Speed 4

Add the flour, eggs, cane sugar, melted butter, dark rum and vanilla sugar in the Thermomix bowl. Mix for 30 Sec./Stufe 4.

Incorporation of the banana puree

Thermomix® Setting
15 sec/Speed 3/Linkslauf Reverse

Add the banana puree prepared previously in the Thermomix bowl. Mix delicately for 15 Sec./Stufe 3/Linkslauf, by using the reverse function to not work the dough too much.

Addition of the yeast

Thermomix® Setting
10 sec/Speed 3/Linkslauf Reverse

Add the packet of baking powder and mix for 10 Sec./Stufe 3/Linkslauf to incorporate it well to the dough.

Baking in the oven

Pour the preparation in a round mold previously buttered and floured. Bake in a traditional oven preheated to 150°C for 35 minutes. Check the baking with the tip of a knife.
