Description

This lemon and walnut cake is a true gem of home baking! Its soft texture and intense lemon scent make it irresistible. Preparing it is quick and easy, perfect for a delicious breakfast or a family snack. The chopped walnuts add a crunchy touch that goes perfectly with the lemon cream. Ingredients (14 ingredients)

  • 200 g 00 Flour
  • 8 g Baking powder
  • 1 pinch Salt
  • 100 g Butter
  • 100 g Sugar
  • 2 piece Eggs
  • 50 ml Milk
  • 100 g Shelled walnuts
  • 1 piece Lemon
  • 2 piece Lemon
  • 200 ml Milk
  • 50 g Sugar
  • 30 g 00 Flour
  • 3 piece Egg yolks

Preparation (8 steps)

Grate the lemon zest and chop the walnuts

Grate the zest of one lemon. Put 100g of shelled walnuts in the bowl and chop for 5 Sec./Stufe 5.

Prepare the dough

Thermomix® Setting
30 Sec./Speed 4

Put 100g of butter and 100g of sugar in the bowl and mix for 20 Sec./Stufe 4. Add 2 eggs and mix for 20 Sec./Stufe 4. Add 200g of 00 flour, 8g of baking powder and 50ml of milk and mix for 30 Sec./Stufe 4.

Add walnuts and lemon zest

Add the chopped walnuts and grated lemon zest to the mixture and mix for 10 Sec./Stufe 3.

Bake the cake

Pour the mixture into a buttered and floured mold. Bake in a preheated oven at 190°C for 30 minutes. Do the toothpick test to check if it is cooked.

Prepare the lemon cream

5 min/194°F/Speed 1 90

Cut the zest of 2 lemons (only the yellow part). Put 200ml of milk and the lemon zest in the bowl and cook for 5 Min./90°C/Stufe 1.

Filter the milk

Filter the milk to remove the lemon zest.

Complete the cream

7 min/176°F/Speed 2 80

Put 3 egg yolks and 50g of sugar in the bowl and mix for 20 Sec./Stufe 3. Add the filtered milk and 30g of 00 flour and cook for 7 Min./80°C/Stufe 2.

Pour the cream on the cake

Pour the lemon cream over the cooled cake and decorate with lemon slices.
