Description

This sour-spicy Asia soup is a real taste experience! With ground meat, crunchy vegetables and a good portion of spiciness, it warms you from the inside and is perfect for cold days. I like to make it when I need to be quick, but still want something special on the table. The Mu-Err mushrooms and bamboo shoots give the soup a great texture, and the eggs make it nice and creamy. If you don't like it so spicy, you can of course be a little more sparing with the Sambal Oelek. A dash of rice vinegar rounds off the taste perfectly. Simply delicious!

Ingredients (16 ingredients)

  • 3 EL, gehäuft Vegetable broth clear, instant
  • 800 g Ground meat
  • 1 bunch Oil
  • 4 piece Carrot(s)
  • 2 piece Onion(s)
  • 6 piece Tomato(es)
  • Soy sauce
  • Rice vinegar
  • 1 Glas Mu-Err mushrooms
  • 1 Glas Bamboo shoot(s)
  • 4 piece Egg(s)
  • 1 Tube/n Sauce binder
  • Sambal Oelek
  • Tomato ketchup
  • Sugar
  • Salt

Preparation (7 steps)

Prepare vegetables

Thermomix® Setting
7 sec/Speed 5

Clean the spring onions, peel the carrots, wash the tomatoes, peel the onions and cut everything into coarse pieces. Put the vegetables in the mixing bowl and chop for 7 sec./level 5.

Fry ground meat

Fry the ground meat in a pan with a little oil until well done and set aside.

Sauté vegetables

Add the chopped vegetables from the mixing bowl to the ground meat in the pan and sauté briefly. Add approx. 1/2 glass of water, 6 tablespoons of tomato ketchup and 3 teaspoons of Sambal Oelek, stir well and bring to a boil briefly.

Prepare broth

Pour 2 liters of water into the mixing bowl and bring to a boil for 10 min./100°C/level 1.

Stir in eggs

Thermomix® Setting
1 min/Speed 2

Whisk the 4 eggs with a whisk and slowly add to the mixing bowl. Stir for 1 min./level 2.

Finish soup

5 min/212°F/Speed 2 100

Add the instant broth, the finely chopped Mu-Err mushrooms, the contents of the pan and the bamboo shoots to the mixing bowl. Cook for 5 min./100°C/level 2.

Season and thicken

Thermomix® Setting
2 min/212°F/Speed 2 100

Season the soup with soy sauce, rice vinegar, tomato ketchup, salt, sugar and Sambal Oelek until it tastes sour and spicy. Thicken with sauce binder and bring to a boil for 2 min./100°C/level 2 while stirring.
