Description

This creamy courgette and pea soup is a delightful summer dish that's ready in just 15 minutes! I love how the sweetness of the peas complements the mild flavor of the courgette. It's incredibly easy to make, perfect for a light lunch or a quick dinner. The addition of Greek yogurt adds a lovely tang and creaminess. This soup is vegetarian and can easily be made vegan by substituting the yogurt with a plant-based alternative.

Ingredients (5 ingredients)

  • 3 piece courgettes
  • 200 g podded fresh or frozen pea
  • 900 ml hot vegetable stock
  • 85 g trimmed watercress
  • 2 tbsp Greek yogurt

Sauté Courgette and Spring Onions

Add a little oil to the mixing bowl. Add the courgettes and spring onions and cook for 3 Min./120°C/Speed 1.

Add Peas and Stock

Thermomix® Setting
4 min/212°F/Speed 1 100

Add the peas and hot vegetable stock to the mixing bowl. Cook for 4 Min./100°C/Speed 1.

Incorporate Watercress

Add the watercress to the mixing bowl and stir with the spatula until wilted. No Thermomix settings are needed for this step.

Purée the Soup

Thermomix® Setting
30 Sec./Speed 8-10

Purée the soup for 30 Sec./Speed 8, gradually increasing to Speed 10.

Add Yogurt and Season

Add the Greek yogurt to the mixing bowl and stir with the spatula. Season to taste. No Thermomix settings are needed for this step.
