Description

This Parmesan egg soup is a quick and easy dish, perfect for cold days. I often make it when I'm short on time but still want something warm and hearty on the table. The combination of the strong broth, the spicy Parmesan, and the tender egg flakes is simply delicious. A dash of fresh parsley provides a nice freshness. Preparation in the Thermomix® is super quick and guaranteed to succeed! Ideal as a starter or light meal.

Ingredients (7 ingredients)

  • 1 Liter Meat broth or chicken broth
  • 4 piece Egg(s)
  • 2 tbsp Parmesan grated
  • 1 tbsp Durum wheat semolina
  • to taste Parsley chopped
  • to taste Salt
  • to taste Pepper

Preparation (3 steps)

Heat broth

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 1 liter of meat broth or chicken broth to the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Prepare egg-Parmesan mixture

In a separate bowl, mix 4 eggs well with 2 tbsp grated Parmesan, 1 tbsp durum wheat semolina, some chopped parsley, salt, pepper and 3 tbsp of the hot broth.

Add egg-Parmesan mixture and cook

2 min/194°F/Gentle stir speed 90

Add the egg-Parmesan mixture to the gently simmering broth in the mixing bowl while stirring and stir in for 2 min./90°C/gentle stir setting. The soup should look creamy and a little flaky.
