Description

This curried vegetable soup is a fantastic way to use up leftover roasted or boiled vegetables after a big holiday meal. It's packed with flavor from the curry paste and is incredibly comforting on a cold day. Ingredients (7 ingredients)

  • 1 tbsp sunflower oil
  • 1 piece medium onion
  • 2 piece celery
  • 2 piece medium potatoes
  • 1 tbsp curry paste
  • 1.2 l vegetable stock
  • 550 g leftover roasted or boiled vegetables, such as Brussels sprout

Preparation (7 steps)

Prepare onion and celery

Peel the onion and cut into quarters. Wash and roughly chop the celery. Place the onion and celery into the mixing bowl and chop for 3 Sec./Stufe 5.

Add the sunflower oil to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Peel and dice the potatoes. Add the potatoes and curry paste to the mixing bowl and cook for 2 Min./120°C/Stufe 1.

Pour in the vegetable stock. Bring to the boil and then simmer for 20 Min./100°C/Stufe 1.
