Description

This vibrant green vegetable soup is packed with fresh, seasonal flavors. I love making it in the spring when green onions, garlic scapes, kale, and chard are at their peak. It's a hearty and healthy meal that's perfect for a light lunch or dinner. The Greek yogurt topping adds a creamy tang that complements the earthy vegetables beautifully. Feel free to adjust the seasonings to your liking. This soup is also a great way to use up any leftover greens you have in the fridge!

Ingredients (12 ingredients)

  • 6 piece green onions, chopped
  • 2 piece garlic scapes, chopped
  • 0.5 cup olive oil
  • 1 piece head lettuce, separated into leaves
  • 1 bunch rainbow chard, trimmed and rinsed
  • 1 bunch kale, stems removed
  • 2 cup vegetable broth
  • 1 tablespoon dried savory
  • 1 tablespoon dried marjoram
  • salt and ground black pepper
  • 1 cup Greek yogurt
  • 1 tablespoon Italian seasoning

Chop green onions and garlic scapes

Chop lettuce, chard, and kale

Add 1 head lettuce (separated into leaves), 1 bunch rainbow chard (trimmed and rinsed), and 1 bunch kale (stems removed) to the mixing bowl and chop for 5 Sec./Stufe 5.

Cook the greens

Cook the chopped greens in the mixing bowl for 5 Min./100°C/Stufe 1.

Add broth and seasonings

Pour in 2 cups vegetable broth, 1 tablespoon dried savory, 1 tablespoon dried marjoram, salt and ground black pepper to taste. Cook for 45 Min./100°C/Stufe 1.

Prepare the yogurt topping

In a separate bowl, mix 1 cup Greek yogurt and 1 tablespoon Italian seasoning together. Set aside.

Serve the soup

Serve the soup in individual bowls and garnish each with a generous dollop of the yogurt topping.
