Description

These chicken sopes are a Mexican delicacy that I often prepare at home. The corn dough, crispy on the outside and soft on the inside, combined with the shredded chicken and refried beans, is simply irresistible. The sour cream and grated fresh cheese give it the perfect final touch. They are ideal for a casual meal with friends or for a Mexican themed party. The preparation takes a bit of time, but the result is worth it. Go ahead and try them, you will love them! You can add a little pico de gallo or guacamole to give it an extra touch of flavor.

Ingredients (10 ingredients)

  • 500 gramos Corn dough for tortillas
  • 50 mililitros Oil
  • 1 piece Boneless skinless chicken breast
  • 1 litro Water
  • 0.5 piece White onion
  • 4 gramos Salt
  • 250 gramos Refried beans
  • 100 gramos Grated fresh cheese
  • 150 mililitros Sour cream
  • 100 gramos Romaine lettuce

Chicken cooking

Thermomix® Setting
25 min/212°F/Speed 1 100

Place 1 liter of water in the Thermomix bowl. Add 1 piece of boneless skinless chicken breast, ½ piece of white onion and 4 grams of salt. Program 25 Min./100°C/Stufe 1.

Shred the chicken

Remove the chicken from the bowl and shred it with two forks. Reserve the shredded chicken.

Preparation of the dough for sopes

Form corn dough balls of about 20-25 grams. Place them between two plastics and compact with your hands until forming a tortilla of about 10 centimeters wide by 5 millimeters thick approximately.

Cooking the tortillas

Heat a pan over medium heat. Cook the tortillas on both sides until they are lightly golden. Remove and reserve.

Form the sopes

With your fingers, press the entire edge of each tortilla, in a "pinch" shape, until forming a border.

Fry the sopes

Heat 50 milliliters of oil in a pan over medium heat. Fry the sopes on both sides until they are golden and crispy. Remove and place on absorbent paper to remove excess oil.

Serve the sopes

Place on each sope a little of 250 grams of refried beans, shredded chicken, 100 grams of sliced romaine lettuce, 100 grams of grated fresh cheese and 150 milliliters of sour cream. Serve immediately.
